Preparation process

Cut the chicken into bite-sized pieces. Cut the pepper. Grate the garlic and ginger.

In a saucepan, heat the oil and sauté the diced onion and bell pepper until softened. Add the chicken and cook until it turns white. Then add ginger, garlic, and curry, stir, and cook for another minute.

In the meantime, cook the rice. Rinse the rice in salted boiling water. Stir, cover, and cook for 12 minutes, or according to package instructions. The rice should absorb all the water and become tender. Mix it with a fork when cooked.

Pour in the coconut milk and chicken broth, stir, and let simmer for about 10 minutes. Add the peas and cook for additional 2 minutes.

Serve the rice on a plate, pour the sauce over it, and sprinkle with freshly chopped parsley. Serve immediately.
