Curry is one of the most commonly eaten Indian specialities, and its tasty combination of spices and meat or vegetables has made it popular all over the world.
Preparation process

Wash the fillets, pat dry with a paper towel.

Cut the onion, carrot, pineapple into 1 cm cubes. Finely chop the garlic. Divide the pineapple cubes into two equal quantities.

Melt some butter in a deep frying pan over a moderate heat and add the olive oil. Once heated, add the onion, carrot, half of the sliced pineapple and garlic and cook for 3-4 minutes.

Stir in the spices and fry for 60 seconds, then add the tomato concentrate, stock and salt, reduce the heat and cook for 5 minutes. Remove from the stove and use a hand blender to blend the ingredients into a creamy mixture.

Place the pan with the mixture back on the stove, add the fillets and the other half of the diced pineapple, cook, covered, for 45 minutes on a very low heat.

After 45 minutes, turn off the heat and stir in the basil leaves. Once wilted, remove them from the mixture.

Serve warm with cooked rice.
