Preparation process
Chicken Rolls with Prosciutto and Cheese, and Grilled Smoked Chicken Sausages
For the Chicken Rolls:
Debone the chicken thighs, tenderize them, then season with salt, pepper, chopped chili, rosemary, marjoram, mustard, mayonnaise, and a few drops of olive oil. Mix well and let the meat marinate for 30 minutes.
Place a slice of prosciutto and cheese on each piece of meat, roll them up, and secure with a toothpick. Grill the meat rolls and smoked sausages until cooked through.
Prebranac (Baked Beans)
Soak the beans overnight in water to swell, then cook them. Slice the onion into rings and sauté it in olive oil. Add a generous tablespoon of paprika and mix. Blanch the tomatoes in boiling water, peel them, and chop them before adding to the onions. Add the beans along with some of the soaking water from the beans. Set the oven to 200°C (392°F) and bake the prebranac for about 30 minutes.
Ajvar
Grill the peppers, peel them, remove the seeds, and then sauté them in olive oil until they break down. Add salt and wine vinegar, and mix well. The ajvar is now ready.
Lepinje (Flatbreads)
Mix the ingredients into dough and let it rise. Line a baking tray with parchment paper and flour it generously. Using oiled hands, take the dough from the bowl and shape it into a loaf on the parchment paper. Cut it into 4 pieces, shape each into a small loaf, cover with a clean, dry cloth, and let them rise. Grill the small loaves until golden brown.
