Tortellini with Chicken, Brown Butter, and Crispy Asparagus

Preparation process

Parmesan and preserved lemons for garnish (if no preserved lemons are available, use lemon zest)

Cook the tortellini according to the package instructions.

In another pot, pour water, add salt, shallot peels, and 1 chicken breast. Cook on medium heat for about half an hour to make a broth. Strain.

While the broth is cooking, sauté the shallots in olive oil, add salt and pepper. After a few minutes, add the chicken and sauté for a few more minutes. Season with salt, pepper, and chili. Finally, add the asparagus and drizzle with lemon juice.

Add a few ladles of the broth and add the tortellini.

In a saucepan, make brown butter – melt the butter and continue cooking until it smells nutty and turns golden brown.

Place the tortellini with the sauce on a plate, drizzle with brown butter, and sprinkle with Parmesan and preserved lemons/lemon zest.
