Preparation process

Fry the ham in a frying pan until crispy, cut into smaller pieces and set aside.

For the croutons, tear the baguette into small pieces, brush with olive oil, salt and pepper and bake at 200 °C for about 20 minutes until golden brown.

For the topping, mix well the mayonnaise, mustard, lemon zest, lemon juice and anchovies. Season with salt if necessary.

Season the chicken fillets and fry in a teaspoon of oil on both sides until golden brown. Then add a little water, cover and cook until done (about 10 minutes more, depending on the thickness and size of the fillets). Finally, cut the chicken into smaller pieces and pour the sauce left on the pan over them.

In a bowl, mix the shredded lettuce, prosciutto, chicken, croutons, add a little Parmesan cheese and pour the dressing over the top. Mix well.

Place the lettuce in the tortilla and wrap tightly so that there are no holes.

Sprinkle a little Parmesan on the pan and place the wrapped tortilla on top. When the crust is golden brown, repeat on the other side so that the Parmesan crust is on all sides of the tortilla.
